First Course: Culurgiones

traditional stuffed pasta with potato, mint, and saffron served with pecorino romano and simple tomato sauce

The wine has a straw yellow color with intense
aromas of white flowers with balsamic nuances.

Tastes lively, with a good flavor and freshness. Notes of eucalyptus and medicinal herbs take over the mouth.

Second Course: Grilled Octopus
over semolina “fregola” with braised sausage, summer vegetables, and black garlic aioli

A ruby red colored wine with aromas of red berries and warm mediterranean scrub scents.
Leaves the pallet with a remarkable structure—ample, velvety, harmonious and balanced—with fruity notes in evidence.

Third Course: Braised Lamb
with ras-el hanout, grilled onion, and local root vegetables

12 months refinement in barrique; 6months in the bottle
Color is a bright ruby red
with a nose of red fruits, liquorice and myrtle, with a balsamic and spicy base.

Palate: soft and enveloping, silky texture with pronounced tannins and balanced freshness.

Fourth Course: Sebadas
a crispy fried fritter made with young pecorino and meyer lemon curd, drizzled with orange blossom honey
