First Course: Crostini al Salmí
Crostini with chicken liver pâté, truffle oil, sea salt and honey
*Paired with Cotarella Ferentano IGP
Roscetto Grapes, vinified in steel and oak. On the nose it presents a rich range of olfactory sensations going frombanana to pineapple, from vegetable to vanilla scent. The taste is assertive, rich, soft and full with an excellent long and lingering finish.
Second Course: Paccheri alla Gricia
Guanciale, Pecorino Romano and black pepper sauce over Paccheri pasta
*paired with Cotarella Sodale IGP
Intensely red in color with purple reflections, this wine contains aromas of red fruit and sweet spices that
balance out vanilla wood notes. On the palate this wine is round and harmonious with a persistent finish and sweet tannins.
Third Course: Braised “Cappello del Prete”
Marinated and braised beef shoulder, served with whipped potatoes and red wine gravy
*paired with Cotarella Sodale and Cotarella Montiano
We will enjoy the contrast between the two wines, both 100% Merlot, the Sodale has intensely red in
color with purple reflections, this wine contains aromas of red fruit and sweet spices that balance out
vanilla wood notes. On the palate, the win e is round and harmonious with a persistent finish and sweet
tannins.
Montiano is a deep ruby red color and exhibits a wide range of aromas from red berries to spices with hints of
vanilla. On the palate it is supple, full-bodied, elegant, and remarkably enjoyable with a lingering finish.
Fourth Course: Panpepato
Typical Italian dessert composed of nuts, honey, cocoa and spices.
