First Course: 
Lobster Croquette - Potato, lobster and cheese filling coated in bread crumb and crispy fried

 

paired with Pine Mountain – Cloverdale Peak Sauvignon Blanc 2021

Explosive aromas of key lime, freshly squeezed lemon juice, and pineapple slowly subside allowing the softer notes of white peach, green apple, lemon meringue and orange blossom guide you into the glass. The aroma isn’t complete without the vineyards trademark hint of savory mountain scrub best described as soft chamomile or dried sage. On the palate, the first sip is electric. The initial flavors then give way to minerality, an elegant texture and an overall softness that is achieved through lees stirring and is the secret in balancing the high acidity. This balancing act is what makes this wine so mouthwatering and almost irresistible for that next sip. Yum.

Second Course:
American Wagyu - Sirloin Roasted Mushrooms, Truffle Shoestrings and Garlic Broccolini
 

paired with Pine Mountai N – Cloverdale Peak Cabernet Sauvignon 2018

It has a dark brooding bouquet of wild black fruit, spiced red cherry and layers of soft

cedary oak that invite you into the glass. Textbook mountain tannins are balanced by

bright acid that complement each other to provide a firm yet lively palate. Cassis,

dark plum, and more red berries combine to provide endless layers of nuanced texture,

with an elegant, lingering finish.

 
Third Course:
Chocolate Ganash - Cake Raspberry sauce and whipped mascarpone, candied walnuts

 

paired with Pine Mountain – Cloverdale Peak Merlot 2019

2019 is the birth year of the very first Captûre Merlot from Pine Mountain. Very dark blue fruits, heavy savory spice give a seductive nose. 19% Cabernet Sauvignon selected from a lighter block brings bright red fruits and just enough tannins to bolster the gorgeous textbook Merlot fruit. Blueberry, cherry, some dried herbs like sage and a forest floor like character, allspice and a hint of cinnamon. Silky smooth tannins that linger, all framed in balanced acid with just a hint of fine oak.
