First Course
Fried Polenta Ball with sausage and hazelnuts

paired with Vite Colte “Alta Langa” Brut Millesimato
Millesimato shows a mineral character with notes of sliced apples and citrus fruit as
well as raw almonds and crushed stones. Textured and energetic with a medium to full body and delicate mousse. Vivid acidity and notes of crunchy stone fruit follow through to a refined finish

 
Second Course
Chestnut Soup with Rice and Milk

paired with Vite Colte “Fosche” Chardonnay DOC
presents lovely nose of baked apples and pears, together with a little pie crust. Medium-bodied with a creamy sensation on the palate, where everything is in the right place. A touch of salt at the end finishes it off nicely.

Third Course
Beef Cheek

braised with grilled onion and fall root vegetables served with grilled polenta cake

paired with Le Spezie Barbaresco DOCG, IT
100% Nebbiolo with ruby red shading to garnet color. The bouquet is very intense and complex, with scents of ripe plum and black cherry. Exhibiting powder coffee and tobacco notes as well. On the palate it is rich and generous. Persistent with sweet and well-integrated tannins. The finish and aftertaste show notes of vanilla and cherry.

Fourth Course
Ravioli del Plin
beef stuffed ravioli in braising liquid

paired with La Luna E I Falò Nizza DOCG Riserva
Aromas of bark, sap, blackberry and blueberry. Medium-to full bodied with some salty-mineral notes.
Juicy. A little savory, with vanilla and ground clove coming through at the end. Nicely structured.

Fifth Course
Pannacotta with Baci di Dama

​

paired with Il Furetto Brachetto d’Acqui DOCG
The color is shimmering red subtly tinged with pink with a bouquet of richly aromatic, intense crisp fruit particularly strawberry and cherry, hints of rose petals. On the palate it has both sweetness and acidity well balanced, with a velvety smoothness and a slight effervescence. The finish shows notes of almond.
