First Course: A Salty Dessert
Panna cotta of Pecorino and Granita of tomato with Sesame Crostini
*Paired with “Ribellante”-Pakravan Papi-Supertuscan Bianco
Malvasia, Riesling, Chardonnay Blend. It is a big, but refined wine. Fragrant but fresh.
Hint of grapefruit, mirabellas and acacia blossom with an elegant, mineral finish.
Second Course: Classic Lasagna
with Boar Ragu, Besciamella Sauce and Mozzarella
*Paired with “Prunicce” Pakravan Papi-Supertuscan
Sangiovese and Cabernet Sauvignon Blend. 12 months in barrique, 4 months in concrete, then
12 months in a bottle. Fruity and smooth, with notes of cedar, chocolate, and coffee.
Medium tannins, hints of vanilla with a long finish.
Third Course: Stracotto di Manzo al Vino Rosso
Red Wine Beef Shoulder Stew with Mediterranenan Herbs Mashed Potatoes.
*Paired with “Cancellaia” Pakravan Papi, Supertuscan.
Cabernet Sauvignon and Cab Franc Blend. Soft pressed grapes, maceration at controlled temperature.
Ageing in medium toasted French and American oak for 12 months, then 12 months in bottle to find its
balance. Red fruits are well integrated with notes of spices and herbs. The flavor is firm, with ripe tannins
and a long finish.
Fourth Course: Tozzetti Toscani
Typical Italian Biscotti, with Hazelnuts, Walnuts, Almonds or Dark Chocolate
*paired with “Beccacciaia” IGT Pakravan Papi-Supertuscan
The vineyard where the Beccacciaia is produced lies on a gentle slope facing the south and exposed to the sea breeze.The pruning reduces the annual growth of the plants’ buds to keep the ideal balance between the water scarcity of the soil and the quantity of the grapes produced. The wine produced is rich of tannins, scents and aromas.The very mineral soil gives notable complexity to the wine structure, which is characterized by
predominant sour cherry tones and by a balsamic hint which balances the power of the tannic structure with the alcoholic strength.
